Wine List
French wines, despite the meteoric rise of such winemaking areas
as California and Australia, remain the benchmark for most wine
drinkers.
The classic Bordeaux and Burgundies, the white wines
of the Loire, the dessert wines of Sauternes, Champagne and the
exotic Gewürztraminers of Alsace are the model for every vintner
who considers planting the noble European grapes.
Wine is the most natural of medicines whose benefits
to the heart, digestive and nervous systems have been well documented
by many medical institutions around the world.
In some regions of France, those early experiments
were so successful that the names of the wines - or rather the communes
where they were produced - and the grape varieties from which they
were made, have become familiar terms to wine drinkers throughout
the world.
Wine in the broadest sense is a drink made from fermented
fruit, and more specifically from the fermented juice of the grape.
The French have a saying: "The vine stock is the Mother.
The soil is the Father. The climate is its Destiny."
Like all living things, it has its own breadth, its
own areas of light and shade, making it something unique and irreducible.
The wine list is both image and announcement, a promise,
an act of faith in the land, the vine and the work of man.
It is a diamond with a thousand facets, each one representing
a wine.
